A fermentation revolution is coming! From my interests in preserving food and sustainability grew the idea of creating a place where you can preserve and grow foods in different climates. 

 

The aim of the station is to create a communal place for different fermentation techniques to take place. A place to experiment and enjoy the process. 

The chambers are interchangeable, which means that according to the needs of the users they can be modified. The chambers displayed in this project are. 

- Vacuum lacto fermentation. The racks allow for hangings of different fermentation bags. The temperature is consistent and the bags can be reused. 

- Dehydrator. This is not an actual fermenting technique but it does preserve foods for a long time, and can be used to experiment with.  

- Koji rice- This is a humidity chamber to preserve rice in.
